Cheesy Egg Bites with Ham

Life tends to be so busy in the summer months… especially in the morning! These cheesy egg bites are packed with protein and so easy for on the go breakfast. Even the pickiest of eaters enjoy these. Yes I know, you could just buy them out somewhere to make it even easier. But, if ingredients and cost matter to you then this recipe is here to help!


Ingredients:

• 8 organic eggs

• 1 cup whole milk good culture cottage cheese

• 1 small ham steak diced small

• salt and pepper to taste

• spray avocado/coconut oil


Directions:

• Preheat your oven to 350°. Dice your ham. Line a muffin pan with liners or spray with oil to prevent sticking. Whisk eggs, then add in cottage cheese, whisk again. Add in ham, salt and pepper. One final whisk to combine. Fill 12 muffin pan wells equally. Bake in oven for approximately 20 mins or until a toothpick comes out clean. Keep these in refrigerator and warm in oven or microwave when needed. Can also wrap and freeze then reheat when needed as well!
