Buttery Lemon Grilled Cod

Grilling season brings so many different flavors to the table… literally!


I don’t know about you, but I personally love grilling season because cooking outside, especially fish, doesn't leave my house with an odor. The easy clean up is a win too!


I won’t bore you with all the other many reasons I love grilling and I’ll get straight to the cod recipe.


Ingredients:


• 2 lbs cod (cut to fillets)

• 3 tbsp butter melted

• 2 tbsp lemon juice

• 3 lemons sliced

• celtic salt to taste

• pepper to taste

• 2 tsp parsley

• 2 tsp crushed red pepper flakes


Directions:

• Pre-heat grill to low and keep lid closed. We want to get our grill up to a temperature of about 250°F. While grill is pre-heating, slice lemons and prep your fish. Place the cod fillets on a sheet pan and rub with melted butter and lemon juice. Sprinkle with your seasonings and set aside. Before placing your fish on the grill, line the grill grates with your lemon slices where the fish will be laying. This will create a “bed” of lemon slices for your fish. Lay the fillets on the lemon slices and then close the lid. The fish should take around 15-20 minutes to cook through to flaky perfection. Always be sure to temp your fish to 130°F.
